This was so BOMB!! πŸ’£πŸ’£πŸ’₯πŸ’₯ You have to try it! Just whipped it up spur of the moment for dinner and it was too good not to share πŸ€€πŸ™ŒπŸ»

-About 24 (yes you read that right 😏) red, yellow, orange small peppers
-4 large tomatoes
-1 medium yukon gold potato
-2 medium sweet potatoes
-4 medium zucchini
-10 cloves of garlic
-1 large yellow onion
-1 bunch of cilantro
-1 can of chickpeas (drained and rinsed)
-1 lime
-Spices: Ancho Chile powder, chili powder, paprika, smoked paprika, cumin, onion powder, garlic powder, a sprinkle of turmeric, cayenne pepper, black pepper, oregano, parsley, Himalayan sea salt (I went really heavy handed with the spices for this one, that's what gives the dish it's flavor so make sure you don't skip that step!)

*SautΓ© garlic and onion until translucent (I don't use oil. I add a little bit of water and sautΓ© the veggies. Try doing water sautΓ©s from now on. Much healthier for you than oil and you can't even tell the difference honestly!) Then add in all chopped veggies to pot. Fill pot with filtered water until it covers all of the veg. Add all of the spices, squeeze 1 lime, and add the bunch of cilantro (chopped). Put lid on and cook on medium for 30-40 minutes until all veggies are soft to touch. Serve topped with some fresh peppers and avocado! 🌢πŸ₯‘βœ¨
